I love roasted butternut squash, I hate cutting the squash up. If anyone knows of an easy way to cut up butternut squash let me know. This was probably the best roasted butternut squash I have every had. I don't know if it was the amount of salt or what but this was really good. I've never put thyme on my squash before but it paired very well. I would not change anything. - Kathy
I love butternut squash, so I'll definitely make this one. I saw on TV that someone softened it in the microwave, which makes it easier to cut up. I'm going to try this because I'd love to make it more often, but like you, dread cutting it up.
